01 / ABOUT THE PLACE
From the kitchen comes the crisp, rhythmic clang of the wok, sending out dishes that feel comfortably nostalgic while revealing attentive craftsmanship in every bite. Situated along Waseda-dori in Asagaya-Kita, Ichiban is a quintessential machi chūka—a neighborhood Chinese diner—stocked with timeless noodles, rice dishes, and savory plates suited for pairing with a drink when you want a hearty meal.
The pairing that many regulars turn to first is ramen served alongside fried rice. The ramen's clear chintan broth delivers an elegant profile where chicken bone and seafood stock seep through gently, offering a light yet rich umami that clings cleanly to the noodles. Next to it, the fried rice strikes an exacting balance between loose, separate grains and subtle moisture; seasoned evenly with Chinese stock and salt, it keeps the spoon moving until the bowl is clean. Ramen sets can also be matched with a chūkadon (chop suey rice bowl) or curry rice, letting diners tailor a filling meal to their mood.
Alongside the staples, the dumplings are well worth ordering: generously sized and packed tightly with meat filling, they release rich juices with each bite. The rebanira (stir-fried liver and garlic chives) features hearty chunks of thick-cut pork liver tossed with garlic chives and bean sprouts in a robust sauce, making an equally good match for a bowl of plain rice or a cold beer. For something different, the kitchen also prepares distinctive options like a black ramen made with a blend of 3 soy sauces, aromatic black garlic fried rice, and shrimp fried rice.
The interior is a compact dining room centered on counter seating, creating a relaxed, unpretentious atmosphere where solo diners can easily drop in. Because the owner cooks each dish carefully to order, a patient mindset serves guests best during busier hours. The restaurant accepts code payments such as PayPay and d Barai and offers takeout, making it a reliable neighborhood fixture for everyday lunches and dinners.
